Rondeña Broad Beans

Ingredients:

  • 1 kg of artichokes
  • 1 kg. of broad beans
  • 1 kg of peas
  • 1 onion
  • 1 tomato
  • 1/2 kg. of morcilla (like Black Pudding)
  • Flour
  • Stock
  • Salt

Elaboration:

  • Clean the artichokes and cut them into pieces
  • Wet the artichokes, broad beans and peas and roll them in the flour
  • Rondeña Broad Beans
  • Boil them with water and salt, drain and put to one side
  • Fry the onion with a tablespoon of tomato and add the artichokes, broad beans and peas.
  • Fry everything lightly
  • Cover everything with the stock and add the slices of morcilla
  • Cook for ten minutes and serve
