Beef a la Sevillana

Ingredients:

  • Beef, 800 grams
  • 2 medium sized onions
  • 1 clove of garlic
  • 1 cup of meat stock
  • 1 tablespoon of toasted almonds
  • 2 tablespoons of stoned olives
  • ½ a cup of dry white wine
  • 1 cup of fried tomato
  • 2 sticks of cinnamon
  • 4 tablespoons of olive oil
  • salt, to taste
  • black pepper, to taste

Elaboration:

  • Wash the meat and take the fat off.
  • Stuff it with the olives, almonds and cinnamon sticks
  • Chop the onions and garlic
  • Fry the meat on both sides until it’s golden.
  • Add the oil, onion and garlic.
  • Lightly fry, without letting the garlic darken too much
  • Add the stock and wine, salt and pepper
  • When it comes to the boil, cover and leave until the meat’s tender
  • Serve with the sauce and the fried tomato
