If the pescaito frito of mixed fried fish is, deservedly, famous, no
less so is the variety of shellfield, clams and molluscs of the Costa
de la Luz. Spider crab, red crab, rock crab, urchins, prawns and crayfish,
clams, mussels, wedge shells, oysters, shrimps and others, all filling
the huge glass displays of the best seafood retaurants.
Although seafood can be prepared in many different ways – cooked,
raw, fried, grilled or on a hotplate, and served just as well hot
or cold – the fact is that custom sets down that there are
defined ways to prepare each different type of seafood to bring
out its best flavour.
