The typical desserts of the Cádiz mountains, high
in calories and made from 100 per cent natural products,
have, in the rich native honeys and the fruits of the beautiful
almond trees, a fine base from which to concoct superb delicacies.
Among the most outstanding are the amarguillos (sweetbreads
of diced almonds, cinnamon, sugar, egg and lemon rind), or
cubiletes, a baked whipped butter and eggs confection, often
made at Christmas, flavoured with cinnamon and sugar, stuffed
with a cream of apple (or cider) and syrup known as cabello
de ángel (angel’s hair).
