GRAZALEMA. Restaurants. Local cuisine
Among
the typical dishes of the region, apart from its famous game,
is the exceptional queso de cabra payoyo, a type of ecological
goat’s cheese granted its own denomination and made
only in the area around the nearby town of Villaluenga. We
should also give especial note to the local honey and the
famous pork products, as well as the unique sopa de Grazalema
soup (a consomme with bread, egg, ham or sausage, and mint),
wild asparagus soup or the superb lamb (usually a leg) baked
in the oven. A more eccentric Grazalema speciality, a great
source of free vitamins and iron sprouting wild on the hillsides,
is the wild tagarnina, thistle, usually found in tagarninas
revueltas, or thistle with scrambled eggs (tagarnina is often
interchangeable with asparagus), venison in a rich herb sauce,
sweet potato (or yam), acorn tart… and, for desserts,
amarguillos (sweetbreads of diced almonds, cinnamon, sugar,
egg and lemon rind), or cubiletes, a baked whipped butter
and eggs confection, often made at Christmas, flavoured with
cinnamon and sugar, stuffed with a cream of apple (or cider)
and syrup.
